Since Zarko was very young, his passion for food started at his grandparents’ farm in Macedonia. There he learned the process of farming through seeding the land, nurturing the plants, and picking the best produce to cook meals with each day. His involvement through every step of the meal made him respect and appreciate cooking like nothing he had ever experienced before. In Macedonian culture, you are required to pick your career by the age of 16. There was no doubt that Zarko chose culinary and that his life would lead to exceptional opportunities.
By the age of 26 he had moved to New York to further his career where he attended the French Culinary Institute. As he perfected his craft, he worked for Norwood Club and went on to work for extraordinary restaurants such as Daniel, DB Bistro, and Bar Boulud before moving to New Jersey. From there he served as an Executive Sous Chef to the Harvest Restaurant Group, a privately owned fine dining restaurant chain serving primarily Italian and American cuisine. Zarko’s debut as Chef de Cuisine was at Chakra, a modern American fine dining restaurant in Paramus.
Every chef’s dream is to own their own place, and it was no different for Chef Zarko. All of his hard work and life experiences being in the industry pushed him to open his own restaurant. He strongly believes that with every new restaurant you have a new beginning, and having his own restaurant would make for the best journey yet.
